A Mid-Month Morsel for December
If you need an elegant but easily prepped appetizer for your holiday gatherings, try this mango salsa. This recipe can be summed up in two steps: chop and stir. Plus, mango makes a bright and juicy alternative to tomatoes that might be a tad tired by the time their mid-December travels are over.
Mango's fruity taste contrasts wonderfully with salty nacho chips, or use it to top brie on crackers. Paired with a small serving bowl, a jar of salsa makes a thoughtful gift for your host. And it tastes just as good in front of the TV with your favourite holiday flick!
Mango Red-Pepper Salsa
Stir together:
- 2 medium mango, diced
- 1 red pepper, diced
- 1/2 red onion, finely chopped
- 1/2 jalapeno, seeded and minced
- 1/4 c. cilantro, finely chopped
- juice of 1 fresh lime
- 1/8 t. salt
- 1/8 t. black pepper
And enjoy!
