Our local farmers market started for the season this week and part of the springtime bounty included piles of fresh rhubarb. What to do if you want to indulge but don't have the time or inclination to bake a pie? This easy sauce lets you enjoy the flavour and get out of the kitchen fast.
While rhubarb and strawberries makes a classic combo, in my experience, they both have an astringency that needs some balance. I find that pairing rhubarb with raspberries instead softens the tartness for a more balanced mix.
Strawberry lovers can still easily use them in this recipe. You can even forgot the berries altogether for a full rhubarb flavour, but be sure to add the higher amount of sugar. Whatever your preference, use four cups of fruit in total.

Ingredients
- 3 c. chopped rhubarb
- 1 c. fresh or frozen raspberries (or substitute strawberries)
- 1/2 c. sugar or up to 1 cup to taste
- 1/2 c. water
- Optional: choose from one of 1 t. of vanilla, 1/8 t. cinnamon or 1/8 t. ground ginger
Instructions
1. In a saucepan, combine the fruit, sugar and water. Cook over medium heat, stirring occasionally, until the rhubarb breaks down and the mixture thickens, about 15 to 20 minutes.
2. Remove the saucepan from the heat and stir in any optional flavourings.
3. Let the rhubarb sauce cool before transferring it to a jar or container for storage.
Ways to Enjoy Rhubarb-Raspberry Sauce
- Drizzle over vanilla ice cream for a refreshing dessert.
- Mix into plain yogurt for a tangy twist.
- Spread on warmed scones for a delicious afternoon treat.
